What is Cabernet Sauvignon?
This is one of the world’s most widely recognised red wine grape varieties. Cabernet Sauvignon became internationally recognised through its prominence in Bordeaux wines where it is often blended with Merlot and Cabernet Franc. From France, the grape spread across the world and can be found in Australia’s Margaret River, Clare Valley, Barossa Valley, Mt Barker and Coonawarra regions.
The classic profile of Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine’s ageing potential. In cooler climates, Cabernet Sauvignon tends to produce wines with blackcurrant notes that can be accompanied by green bell pepper notes, mint and cedar which will all become more pronounced as the wine ages.

The producer of this fantastic McLaren Vale The Peak Cabernet Sauvignon 2017 has a long history of producing awesome wines in McLaren Vale. They have been rated 5 Stars by James Halliday in his wine companion. The main vineyard was established in 1998 by a traditional Italian family. The Italian heritage and experience led the way for the families’ involvement with Australia’s agricultural industry. Initially, all the fruit was contracted. In 2004 the first wines were produced under the wineries label.
The philosophy was and still is, creation of wines expressing the purity of variety and regional character. They grow to the strength of the region, producing much sought after Shiraz, Grenache and Cabernet Sauvignon.

This wine is well crafted, the winemaker had a vision in mind to develop a Cabernet Sauvignon that is well balanced with fruit with a heavier finish for the full-bodied red wine drinkers. The finish really does leave this wine with depth which can be matched with any strong savoury dishes.

This Cabernet Sauvignon is anything but green as you’d expect with most in that variety. Deep and dark in its colour, this wine is possessed with abundance of ripe full fruit flavours finishing with chalky and grainy tannins alcohol to keep you warm. A perfect wine winter and is sensational value at $15.00 per bottle.
